Vegan Pecan Pie Recipe

Vegan Pecan Pie

Vegan Pie Crust (good for so many occasions!)

Ingredients: 1 cup soy margarine

1/4 cup boiling water

2 cups flour

pinch of salt

splash of soy milk

In a mixing bowl, add the boiling water to soy margarine and mix until it has a thick, creamy texture. Add flour one cup at a time, stirring with a fork. Add salt & soy milk, then stir until it becomes doughy. Roll out on a floured surface and place in a greased pie pan

Fillling

Ingredients: 2 1/2 cups pecans

1/2 cup maple syrup

1/4 cup barley malt syrup

1/2 teaspoon cinnamon

1 tablespoon arrowroot

2 tablespoons tahini

Pre-heat oven to 350 degrees F

In a food processor, mix until smooth all ingredients except the pecans. Then add the pecans and process until the nuts are chopped and mixed with the other ingredients. Pour this concoction into a pie shell and bake for 25 to 30 minutes.
